Elise Black / Hatch Cover
Chef Elise Black was most recently the GM of The Lucky Well Incubator Season 1. For Season 2, Elise is back in the kitchen with her Mid-Atlantic seafood concept "Hatch Cover". Elise grew up in South Jersey and started cooking as a private chef on Philadelphia's Main Line. She eventually opened her own meal-prep and catering business. In 2018, after six years as a private chef and running Fueled By Elise, she decided to pursue a full-time career in the industry. She has since held positions such as Sous Chef for Nicholas Elmi, Chef De Partie at Fiorella, Sous Chef at Fork, and Chef de Cuisine. The original Hatch Cover was her grandparent’s seafood restaurant in Avalon, NJ in the late 1970s. Her grandfather, Morton Noah Black, opened the spot after he retired as a Captain in the US Navy. The menu's starting point is the family recipe Hatch Cover Clam Chowder and will also include a fried fish sandwich, grilled fish entree, snacks like fried oysters- and more. You can expect the structure of the menu to remain the same, with some vegetarian options as well, but many dishes will change with seasonal produce and fish availability. Elise’s food can be described as Mid-Atlantic focused and European influenced. For this menu she is looking for a balance of fun and experience, where she is able to show off her food pedigree and family recipes, while tapping into memorable summers in Wildwood Crest and Cape May.
